Spice Wallet does not include any default servers. Each asset connects through a server that you specify: a light-wallet server (LWS) or a Monero node for Monero, an Electrum server for Bitcoin, and an RPC endpoint for Ethereum and Dai. You should pick servers that you run yourself to protect your privacy. If you only want to use some assets but not others, you can leave the ones you don't want to use disabled.

Spice Wallet generates a 15-word BIP39 seed, and a single seed phrase secures your wallet across every network it supports. You can restore from any BIP39 phrase, whether it came from Spice Wallet or another wallet. Spice Wallet does not support restoring other seed types.

Yes! But if you are using an LWS, you may need to manually configure subaddresses on your LWS.

It depends on the operating system. On Android, you can enable frequent background syncing to receive updates when you receive incoming transactions, even if you are connected to a node. For iOS, background syncing is conducted as allowed by the operating system, and for Monero it only works for LWS connections (not node connections). If you connect with Tor, notifications may be further delayed.

Spice Wallet holds one wallet per supported asset, and all of them are derived from your single seed phrase. It does not support several separate wallets for the same asset.
